Ultimate Shrimp Grilled Cheese with Garlic Bread

Ingredients

Bread

  • 4 slices thick bread (sourdough or your choice)

Shrimp

  • 1/2 lb shrimp, peeled and deveined

Butter

  • 3 tbsp butter, melted

Garlic

  • 2 cloves garlic, minced

Cheese

  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Seasoning

  • Salt and pepper to taste

Herbs

  • Fresh parsley, chopped (optional)

Instructions

  • Start by preparing your shrimp. Pat them dry, then season lightly with salt and pepper.
  • Heat a nonstick skillet over medium heat. Add a splash of oil (or a dab of butter if you prefer). Sauté the shrimp for 2-3 minutes per side, or until pink and opaque. Remove from heat and roughly chop into bite-sized pieces.
  • In a small bowl, combine melted butter with minced garlic. Mix thoroughly.
  • Brush one side of each slice of bread generously with the garlic butter.
  • On the non-buttered side of two bread slices, layer half the mozzarella and half the Parmesan cheese.
  • Distribute the chopped shrimp evenly over the cheese layer.
  • Sprinkle the remaining cheese on top of the shrimp, then cover with the second slice of bread, garlic butter side out.
  • Wipe out your skillet and heat it again over medium-low. Carefully place your sandwiches in the pan. Cook for 3-4 minutes on the first side until golden and crispy, then carefully flip and cook for another 3-4 minutes until the cheese melts and becomes gooey.
  • Remove, slice in half, sprinkle with fresh parsley if using, and enjoy while warm!

Notes

For best results, reheat in a nonstick skillet over low heat until warmed through and the bread re-crisps—about 2-3 minutes per side.
