Instructions
Start by preparing your shrimp. Pat them dry, then season lightly with salt and pepper.
Heat a nonstick skillet over medium heat. Add a splash of oil (or a dab of butter if you prefer). Sauté the shrimp for 2-3 minutes per side, or until pink and opaque. Remove from heat and roughly chop into bite-sized pieces.
In a small bowl, combine melted butter with minced garlic. Mix thoroughly.
Brush one side of each slice of bread generously with the garlic butter.
On the non-buttered side of two bread slices, layer half the mozzarella and half the Parmesan cheese.
Distribute the chopped shrimp evenly over the cheese layer.
Sprinkle the remaining cheese on top of the shrimp, then cover with the second slice of bread, garlic butter side out.
Wipe out your skillet and heat it again over medium-low. Carefully place your sandwiches in the pan. Cook for 3-4 minutes on the first side until golden and crispy, then carefully flip and cook for another 3-4 minutes until the cheese melts and becomes gooey.
Remove, slice in half, sprinkle with fresh parsley if using, and enjoy while warm!

For best results, reheat in a nonstick skillet over low heat until warmed through and the bread re-crisps—about 2-3 minutes per side.
