Ingredients

For the Cookie Dough

  • 140 grams all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 115 grams unsalted butter, room temperature
  • 100 grams light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

For the Pecan Pie Filling

  • 200 grams chopped pecans
  • 100 grams light brown sugar
  • 85 grams unsalted butter
  • 50 ml heavy cream
  • 1/2 teaspoon vanilla extract

Instructions

  • Preheat oven to 175°C (350°F) and line a baking sheet with parchment paper.
  • In a bowl, whisk together flour, baking powder, and salt.
  • In another bowl, cream butter and brown sugar until fluffy. Beat in the egg and vanilla.
  • Gradually mix in dry ingredients until a dough forms.
  • In a saucepan, melt butter with brown sugar. Stir in heavy cream and bring to a simmer. Remove from heat and mix in pecans and vanilla.
  • Roll dough into balls and place on the baking sheet. Press centers to create a well.
  • Spoon pecan filling into each well.
  • Bake for 12–15 minutes until edges are golden. Cool on sheet 10 minutes before transferring to a wire rack.

Notes

Add maple syrup for a seasonal twist, or mix in chocolate chips. Best served warm or at room temperature. Store up to 5 days in an airtight container.
