For the Cookie Dough
140gramsall-purpose flour
1/2teaspoonbaking powder

115gramsunsalted butter, room temperature
100gramslight brown sugar

For the Pecan Pie Filling
200gramschopped pecans
100gramslight brown sugar
85gramsunsalted butter
50mlheavy cream
1/2teaspoonvanilla extract
Instructions
Preheat oven to 175°C (350°F) and line a baking sheet with parchment paper.
In a bowl, whisk together flour, baking powder, and salt.
In another bowl, cream butter and brown sugar until fluffy. Beat in the egg and vanilla.
Gradually mix in dry ingredients until a dough forms.
In a saucepan, melt butter with brown sugar. Stir in heavy cream and bring to a simmer. Remove from heat and mix in pecans and vanilla.
Roll dough into balls and place on the baking sheet. Press centers to create a well.
Spoon pecan filling into each well.
Bake for 12–15 minutes until edges are golden. Cool on sheet 10 minutes before transferring to a wire rack.
Notes
Add maple syrup for a seasonal twist, or mix in chocolate chips. Best served warm or at room temperature. Store up to 5 days in an airtight container.
