Ingredients

Pecans

  • 1 cup Pecan halves Toasted for extra flavor.

Caramel

  • 1 cup Soft caramel candies
  • 2 tablespoons Heavy cream

Chocolate

  • 1 cup Semi-sweet chocolate chips

Garnish

  • Sea salt flakes For garnish (optional)

Instructions

  • Preheat your oven to 350°F (175°C). Arrange pecan halves on a baking sheet in small clusters of four or five to form the ‘legs’ of the turtles.
  • Bake pecans for 5-7 minutes, just to toast them slightly. Remove from the oven and let cool.
  • In a microwave-safe bowl, combine caramels and heavy cream. Microwave on high in 30-second intervals, stirring in between, until the caramel is melted and smooth.
  • Spoon the melted caramel over each pecan cluster, making sure some of the caramel gets between the pecans to help hold them together.
  • Melt chocolate chips in another microwave-safe bowl with similar 30-second intervals, stirring until smooth.
  • Spoon the melted chocolate over the caramel-covered pecans, covering them completely.
  • Sprinkle lightly with sea salt flakes if using.
  • Refrigerate for about 30 minutes or until set.
  • Serve or package for gifting.

Notes

Keep your Turtle Candies in an airtight container. They are best enjoyed within a week, but they can last up to two weeks at room temperature.
