Ingredients

Dry Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Wet Ingredients

  • 1/2 cup milk
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract

Filling

  • 1 cup finely chopped pineapple

For Frying

Instructions

  • In a large bowl, combine the flour, sugar, baking powder, and salt.
  • Stir in the milk, beaten egg, and vanilla extract until the batter is smooth.
  • Fold in the chopped pineapple to the batter.
  • Heat oil in a deep fryer or a large saucepan to 375°F (190°C).
  • Drop spoonfuls of the batter into the hot oil and fry for 2-3 minutes or until golden brown and cooked through.
  • Remove the fritters with a slotted spoon and drain on paper towels.
