  • 1/2 cup Unsalted Butter melted
  • 1 cup Light Brown Sugar packed
  • 1 large Egg
  • 1 teaspoon Vanilla Extract
  • 1 cup All-Purpose Flour
  • 1/2 teaspoon Baking Powder
  • 1/2 teaspoon Salt
  • 1/2 cup Butterscotch Chips
  • 1/2 cup Chopped Pecans optional

Instructions

  • Preheat your oven to 350°F (175°C). Prepare an 8x8-inch baking dish by greasing it lightly or lining it with parchment paper for easy removal.
  • In a large mixing bowl, stir together the melted butter and brown sugar until the mixture is smooth and well combined.
  • Beat in the egg and vanilla extract until incorporated and glossy.
  • In a separate bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring just until combined. Don’t overmix—this keeps your bars tender and chewy.
  • Fold in the butterscotch chips and, if using, the chopped pecans.
  • Spread the batter evenly into your prepared baking dish, smoothing out the top with a spatula.
  • Bake in the preheated oven for 20 to 25 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.
  • Let the bars cool completely in the pan before slicing into squares. Serve and enjoy every delicious bite!
