  • 1/2 cup Unsalted Butter, softened
  • 1 cup Brown Sugar, packed
  • 1/2 cup Granulated Sugar
  • 2 large Eggs
  • 1 teaspoon Vanilla Extract
  • 1 1/2 cups All-Purpose Flour
  • 1/2 teaspoon Baking Soda
  • 1/4 teaspoon Salt

Instructions

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a large bowl, cream together peanut butter, softened butter, brown sugar, and granulated sugar until light and fluffy.
  • Beat in eggs one at a time, then stir in vanilla extract.
  • In a separate bowl, whisk together flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  • Scoop about 2 tablespoons of dough and roll into balls. Place on the baking sheet 2 inches apart.
  • Flatten tops slightly with your fingers or the bottom of a glass.
  • Bake for 10–12 minutes, or until edges are set but centers are soft.
  • Let cool on the sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Chill dough for 30 minutes before baking for extra thick cookies. Add chocolate chips, chopped peanuts, or a sprinkle of sea salt to customize. Store at room temperature for 1 week or freeze for up to 3 months.
