Ingredients

Cheese Ingredients

  • 32 oz Velveeta cheese, cubed
  • 8 oz Cream cheese, cubed

Other Ingredients

  • 10 oz Rotel (original, mild, or hot)
  • 10.75 oz Cream of mushroom soup
  • 1 lb Ground beef or sausage or a combination of both

Instructions

  • In a skillet over medium heat, brown the ground beef or sausage. Drain excess grease and set aside.
  • Cube the Velveeta and cream cheese and place them into a crock pot.
  • Add the Rotel (with liquid) and the cream of mushroom soup. Stir to combine.
  • Set crock pot to LOW and cook for 1 hour, stirring occasionally.
  • After 30 minutes, add the cooked meat to the cheese mixture. Continue cooking until fully melted and creamy.
  • Serve warm with tortilla chips, crackers, or vegetables. Keep crock pot on “warm” during serving.

Notes

Substitute meat with ground turkey or chorizo. Add jalapeños or hot sauce for heat. Store leftovers in the fridge up to 3 days and reheat gently for best texture.
