Instructions
In a large mixing bowl, whisk together the flour, baking powder, salt, and sugar until well combined.
In a separate bowl, beat the egg and then add the milk and melted butter. Whisk until smooth.
Pour the wet ingredients into the dry mixture. Gently stir until just combined.
Heat a non-stick skillet or griddle over medium heat. Lightly brush with butter or oil.
Scoop about 1/4 cup of batter onto the skillet for each pancake.
Cook for 2-3 minutes, or until bubbles appear on the surface. Flip and cook another 1-2 minutes until golden brown.
Transfer to a plate, cover loosely with foil to keep warm, and repeat with the remaining batter.
Serve immediately with your favorite toppings.
Notes
For extra-rich pancakes, swap half the milk for buttermilk or add a splash of vanilla extract.
