  • 1 cup fresh pineapple chunks
  • 1/4 cup teriyaki sauce
  • 1 tablespoon olive oil
  • 1 piece red bell pepper, sliced

Instructions

  • Preheat your grill or oven to 400°F (200°C).
  • Cut two large pieces of aluminum foil.
  • In a bowl, mix chicken breasts with teriyaki sauce and olive oil until well coated.
  • Place each chicken breast in the center of a foil piece.
  • Top with pineapple chunks, sliced red bell pepper, and carrot slices.
  • Fold the sides of the foil over to create a sealed packet.
  • Place the packets on the grill or in the oven and cook for 20-25 minutes.
  • Carefully open the packets, serve hot, and enjoy!

Notes

For extra flavor, marinate the chicken in teriyaki sauce for at least 30 minutes before cooking. Serve with jasmine rice or quinoa for a complete meal.
