Ingredients

Meat and Vegetables

  • 1 pound Ground beef raw
  • 1/2 cup Yellow onion peeled and chopped

Sauces and Seasonings

  • 8 oz Tomato sauce
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Paprika
  • 1/2 teaspoon Garlic powder
  • 1/2 teaspoon Onion powder
  • 1/4 teaspoon Ground cumin
  • 1/4 teaspoon Dried oregano
  • 1/4 teaspoon Black pepper

Main Ingredients

  • 32 oz Frozen tater tots 1 package, frozen straight from the freezer
  • 2 cups Shredded cheddar cheese shredded

Optional Toppings

  • Green onions sliced
  • Diced tomatoes
  • Sliced canned black olives
  • Red onion finely diced
  • Sour cream for serving

Instructions

  • Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  • In a skillet over medium heat, add the ground beef and chopped onion. Cook until the beef is browned and the onion is soft, about 8 minutes. Drain any excess grease.
  • Return the skillet to low heat and stir in the tomato sauce, salt, black pepper, ground cumin, paprika, dried oregano, garlic powder, and onion powder. Simmer for 2 minutes.
  • Spread the beef mixture evenly in the prepared baking dish.
  • Arrange the frozen tater tots in a single layer on top of the beef.
  • Bake in the preheated oven for 35 minutes until the tater tots are golden and the beef mixture bubbles at the edges.
  • Remove the casserole and sprinkle the shredded cheddar cheese over the tater tots. Return to the oven and bake another 10–15 minutes until the cheese is melted and bubbly.
  • Let the casserole cool for 10 minutes, then top with optional toppings and serve warm.

Notes

This casserole is hearty on its own, but pairs well with a crisp green salad or steamed broccoli.
