Ingredients

For the casserole

  • 1 pound ground beef
  • 0.5 cup yellow onion, peeled and chopped
  • 8 oz tomato sauce
  • 0.5 teaspoon salt
  • 0.5 teaspoon paprika
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 0.25 teaspoon ground cumin
  • 0.25 teaspoon dried oregano
  • 0.25 teaspoon black pepper
  • 32 oz frozen tater tots (1 package)
  • 2 cups shredded cheddar cheese

Optional Toppings

  • green onions, sliced
  • diced tomatoes
  • sliced canned black olives
  • red onion, finely diced
  • sour cream

Instructions

  • Preheat oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  • In a skillet over medium heat, cook ground beef and chopped onion until browned and soft (about 8 minutes). Drain grease.
  • Stir in tomato sauce, salt, pepper, cumin, paprika, oregano, garlic powder, and onion powder. Simmer 2 minutes.
  • Spread beef mixture evenly in prepared baking dish. Top with frozen tater tots in a single layer.
  • Bake for 35 minutes, until tater tots are golden and crisp.
  • Sprinkle cheddar cheese over the top and bake another 10–15 minutes until melted and bubbly.
  • Cool for 10 minutes, then top with green onions, tomatoes, olives, red onion, and a dollop of sour cream if desired.
  • Serve warm and enjoy!

Notes

Customize toppings with jalapeños, avocado, shredded lettuce, or crushed tortilla chips. Use ground turkey or plant-based meat for variations. Can be assembled a day in advance before baking.
