  • 4 medium Bell peppers Any color, halved and seeds removed
  • 1.5 lb Ground beef Or ground turkey
  • 1 packet Taco seasoning Or homemade taco seasoning
  • 3/4 cup Water
  • 1.5 cup Cheddar cheese Shredded
  • 1 cup Sour cream For topping
  • 1/2 cup Salsa For topping
  • 1 cup Corn kernels Rinsed and drained
  • 1 cup Black beans Rinsed and drained
  • 1 bunch Fresh cilantro For garnish

Instructions

  • Preheat oven to 375°F (190°C). Hollow out the bell peppers by cutting the tops off and removing the seeds and membranes.
  • In a skillet, cook ground beef or turkey with chopped onions until browned. Stir in taco seasoning, water, cooked rice, black beans, and corn. Mix thoroughly.
  • Place the prepared peppers in a baking dish and fill them with the taco mixture. Top with shredded cheese.
  • Cover with foil and bake for about 30 minutes. Uncover and bake for an additional 10 minutes until the peppers are tender and cheese is bubbly.

Notes

Serve with a side of tortilla chips, salad, or extra rice. Great for meal prep!
