Instructions
Preheat oven to 375°F (190°C). Hollow out the bell peppers by cutting the tops off and removing the seeds and membranes.
In a skillet, cook ground beef or turkey with chopped onions until browned. Stir in taco seasoning, water, cooked rice, black beans, and corn. Mix thoroughly.
Place the prepared peppers in a baking dish and fill them with the taco mixture. Top with shredded cheese.
Cover with foil and bake for about 30 minutes. Uncover and bake for an additional 10 minutes until the peppers are tender and cheese is bubbly.
