Instructions
Preheat your oven to 375°F (190°C) and prepare a mini muffin tin by greasing lightly or lining with paper cups.
In a large skillet over medium heat, cook the ground beef until it’s well browned and fully cooked, breaking it up with a spoon as you go. Drain any excess fat.
Sprinkle the taco seasoning over the cooked beef, then stir in the undrained can of diced tomatoes and green chiles. Let the mixture simmer for about 3-4 minutes, allowing flavors to meld and some liquid to evaporate.
Remove from heat and stir in the shredded cheddar cheese, mixing until the cheese is just melted and the mixture is creamy.
Spoon the beef and cheese mixture evenly into the prepared mini muffin cups, filling each one nearly to the top.
Place the tray in the oven and bake for 10-12 minutes, or until the cheese is bubbling and the edges are lightly golden.
