Meatloaf Ingredients

  • 1.5 pounds ground beef
  • 1 tablespoon olive oil
  • 1 tablespoon sesame oil
  • 0.25 cup soy sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons gochujang (Korean chili paste)
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • 1 tablespoon rice vinegar
  • 1 large egg
  • 1 cup panko breadcrumbs
  • 1 tablespoon green onions, sliced (for garnish)
  • to taste sesame seeds (for garnish)

Instructions

  • Preheat your oven to 375°F (190°C). Grease a loaf pan or line it with parchment paper.
  • In a large bowl, combine ground beef, olive oil, sesame oil, soy sauce, brown sugar, gochujang, garlic, ginger, rice vinegar, egg, and panko breadcrumbs.
  • Mix until just combined. Do not overmix.
  • Transfer the meat mixture to the prepared pan and shape it into a loaf.
  • Bake for 40–45 minutes or until fully cooked through.
  • Optional: In the last 10 minutes of baking, brush the top with extra gochujang and a little honey for a sticky glaze.
  • Let the meatloaf rest for 5 minutes, then slice and garnish with green onions and sesame seeds. Serve hot!

Notes

Use ground turkey or chicken for a leaner version. Reduce gochujang if you prefer less spice, or replace with BBQ sauce for a milder glaze. Serve with jasmine rice and steamed veggies for a complete meal.
