  • 4 cups Rhubarb, cut into 1-inch pieces
  • 1 cup Granulated sugar
  • 1/2 cup Water
  • 1 unit Juice and zest of one lemon

Instructions

  • In a large saucepan, combine the rhubarb, sugar, water, lemon juice, and half of the lemon zest.
  • Bring the mixture to a simmer over medium heat, stirring occasionally.
  • Reduce the heat to low and continue cooking, stirring occasionally, until the rhubarb is tender and the mixture has thickened, about 10-15 minutes.
  • Remove from heat and stir in the remaining lemon zest.
  • Serve warm or allow to cool and refrigerate. Enjoy it alone, with yogurt, or as a topping for your favorite desserts.

Notes

For added flavor, mix in strawberries or apples with the rhubarb. Adjust the sugar to your preferred sweetness level.
