  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1 1/2 cups all-purpose flour

  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup chopped pecans

Instructions

  • Preheat oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  • In a large bowl, whisk together melted butter, granulated sugar, and brown sugar until smooth.
  • Beat in eggs one at a time, then add vanilla extract.
  • Mix in buttermilk until fully combined.
  • In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
  • Gradually fold the dry ingredients into the wet mixture until just combined.
  • Gently fold in chopped pecans.
  • Pour batter into the prepared loaf pan and smooth the top.
  • Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  • Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

For best results, use fresh pecans. Store in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.
