Ingredients

Dry Ingredients

  • 1.75 cups All-purpose flour
  • 0.75 cup Unsweetened cocoa powder
  • 1.5 teaspoons Baking powder
  • 1.5 teaspoons Baking soda
  • 1 teaspoon Salt

Wet Ingredients

  • 2 large Eggs
  • 1 cup Granulated sugar
  • 0.5 cup Brown sugar
  • 1 cup Whole milk (room temperature)
  • 0.5 cup Vegetable oil
  • 2 teaspoons Vanilla extract
  • 1 cup Boiling water

Ganache Ingredients

  • 1 cup Heavy cream
  • 8 oz Semi-sweet chocolate (chopped or chocolate chips)
  • 1 tablespoon Unsalted butter (optional, for a glossy finish)

Instructions

  • Preheat your oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper. Sift together flour, cocoa powder, baking powder, baking soda, and salt in a large bowl.
  • In another bowl, whisk together the eggs, granulated sugar, brown sugar, milk, vegetable oil, and vanilla extract until smooth. Gradually add dry ingredients to wet ingredients, mixing until just combined. Stir in boiling water. The batter will be thin.
  • Divide the batter evenly between the prepared pans. Bake for 30-35 minutes or until a toothpick inserted comes out clean. Cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
  • For the ganache, heat heavy cream in a saucepan until it just begins to simmer. Pour hot cream over chopped chocolate in a bowl and let it sit for 2-3 minutes. Stir until smooth. Stir in butter if desired and let it cool slightly to thicken.
  • Assemble by placing one cake layer on a plate, spreading ganache over the top, and adding the second layer. Spread ganache over the top and sides, smoothing with a spatula.
  • Garnish with chocolate curls, sprinkles, or fresh berries. Allow ganache to set for 30 minutes before slicing.

Notes

Store any leftovers in an airtight container at room temperature for up to 1 day, or in the fridge for up to 4 days. You can also freeze slices for later enjoyment!
