Avocados

  • 4 pieces ripe avocados

Seasoning

  • 1 tablespoon extra-virgin olive oil
  • 1 medium onion, chopped
  • 1 pound ground beef
  • 1 packet taco seasoning

Toppings

  • 2/3 cup shredded Mexican cheese
  • 1/2 cup shredded lettuce
  • 1/2 cup quartered grape tomatoes

Instructions

  • Step 1: Prepare the Avocados - Slice the avocados in half lengthwise and remove the pits. Gently scoop out a little bit of the center (about a tablespoon or so) to create more space for stuffing. Drizzle the cut sides with lime juice to prevent browning and add a fresh, zesty flavor.
  • Step 2: Cook the Beef Filling - In a large skillet over medium heat, warm the extra-virgin olive oil. Add the chopped onion and sauté for 2-3 minutes until translucent. Add the ground beef, breaking it up with a spoon, and cook until browned—about 5-7 minutes. Drain excess fat if needed.
  • Step 3: Season the Beef - Sprinkle in the taco seasoning, stirring well to distribute. Add a splash of water per the seasoning packet instructions. Simmer for 2-3 minutes until the mixture is thick and fragrant. Taste and season with kosher salt and black pepper as desired.
  • Step 4: Assemble the Avocado Tacos - Spoon the cooked beef mixture generously into each avocado half. Top with plenty of shredded Mexican cheese, shredded lettuce, grape tomatoes, and a dollop of sour cream. Feel free to let everyone assemble their own for added fun!
