Ingredients

Dry Ingredients

  • 3 cups all-purpose flour
  • 3 teaspoons baking powder
  • 1 teaspoon fine salt

Wet Ingredients

  • 1 cup caster sugar
  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 1 cup milk
  • 1/2 cup fresh strawberry puree
  • 1/2 cup fresh mango puree
  • 2 tablespoons lime juice

Instructions

  • Preheat the oven to 350°F (175°C) and line a cupcake tin with liners.
  • In a large bowl, whisk together the flour, baking powder, and salt.
  • In another bowl, beat the butter and caster sugar until light and fluffy.
  • Add the eggs one at a time, beating well after each addition.
  • Mix the milk, strawberry puree, mango puree, and lime juice in a jug.
  • Gradually add the dry ingredients and the milk-puree mixture to the butter mixture, alternating between them until combined.
  • Spoon the batter into the cupcake liners, filling each about 2/3 full.
  • Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cupcakes to cool completely before topping with whipped cream or lime frosting and a sprinkle of lime zest.

Notes

Use fresh fruit purees for best flavor, but high-quality store-bought purees work too. For a boozy twist, add a splash of tequila to the batter!
