Instructions
Preheat the oven to 350°F (175°C) and line a cupcake tin with liners.
In a large bowl, whisk together the flour, baking powder, and salt.
In another bowl, beat the butter and caster sugar until light and fluffy.
Add the eggs one at a time, beating well after each addition.
Mix the milk, strawberry puree, mango puree, and lime juice in a jug.
Gradually add the dry ingredients and the milk-puree mixture to the butter mixture, alternating between them until combined.
Spoon the batter into the cupcake liners, filling each about 2/3 full.
Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cupcakes to cool completely before topping with whipped cream or lime frosting and a sprinkle of lime zest.
Notes
Use fresh fruit purees for best flavor, but high-quality store-bought purees work too. For a boozy twist, add a splash of tequila to the batter!
