  • 10 slices White sandwich bread Crusts trimmed
  • 1.5 cups Fresh strawberries Diced small
  • 4 ounces Cream cheese Softened to room temperature
  • 0.25 cups Powdered sugar
  • 2 large Eggs
  • 2 tablespoons Milk
  • 3 teaspoons Granulated sugar Divided
  • 0.25 teaspoon Ground cinnamon

Instructions

  • In a small bowl, toss diced strawberries with 1 teaspoon of sugar and set aside to macerate for about 5 to 10 minutes.
  • Mix softened cream cheese with powdered sugar until smooth and spreadable.
  • Flatten each bread slice with a rolling pin to about 1/8-inch thickness and trim off the crusts. Spread approximately 1 teaspoon of the cream cheese mixture along one edge of each slice, then add a spoonful of the macerated strawberries on top.
  • Carefully roll up the bread starting at the filled edge and press gently to seal. Place each roll seam-side down on a plate.
  • In another shallow bowl, whisk together the eggs, milk, 2 teaspoons granulated sugar, and cinnamon until smooth.
  • Preheat a nonstick pan over medium heat and coat lightly with cooking spray or a little butter. Dip each roll in the egg mixture, turning to coat all sides briefly, then place seam-side down in the pan. Cook until all sides are golden brown, about 2–3 minutes per side.
  • Serve the roll ups warm with syrup, extra fresh strawberries, or a dusting of powdered sugar.

Notes

Use room-temperature cream cheese for easy spreading. Macerate strawberries for at least 5–10 minutes to enhance sweetness.
