Instructions
Allow the frozen strawberries to thaw for about 10 minutes so they’re slightly soft but still very cold.
In a blender, combine the thawed strawberries, coconut milk, honey or maple syrup (if using), lemon juice, and vanilla extract. Pulse a few times to break up large chunks.
Blend until smooth and creamy. Stop and scrape down the sides as needed. If the mixture is too thick, add an extra tablespoon of coconut milk at a time until you reach the desired consistency.
Serve immediately for a soft-serve texture, or spread into a shallow container and freeze for 1–2 hours for a firmer, scoopable consistency.
