Instructions
Allow the frozen strawberries to thaw for about 10 minutes.
In a blender or food processor, combine the thawed strawberries, coconut milk, honey or maple syrup (if using), lemon juice, and vanilla extract.
Blend until smooth and creamy. Add more coconut milk if needed for desired consistency.
Serve immediately for a soft-serve texture or freeze for 1-2 hours for a firmer consistency.
Garnish with fresh strawberries or mint leaves and enjoy!
Notes
For a tropical twist, substitute strawberries with mango or pineapple. Store leftovers in an airtight container in the freezer for up to 2 weeks.
