Instructions
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a bowl, mix diced strawberries with light brown sugar; set aside.
In another bowl, beat cream cheese, granulated sugar, and butter until smooth.
Add egg and vanilla extract; mix until combined.
In a separate bowl, whisk flour, baking powder, and salt.
Gradually mix dry ingredients into wet ingredients.
Fold in strawberry mixture gently, without overmixing.
Drop spoonfuls of dough onto prepared sheet and bake for 10–12 minutes until edges are golden.
Cool on baking sheet 5 minutes before transferring to wire rack.
Notes
For a more decadent cookie, drizzle melted white or dark chocolate over the tops after cooling. Refrigerate dough for 20 minutes if too soft.
