Ingredients
2cupscooked chicken, shredded
2cupsfresh spinach, chopped
8ozcream cheese, softened
1cupmozzarella cheese, shredded
1/2cupsour cream
1/2cupchicken broth
1teaspoongarlic powder
1teaspoononion powder
Salt and pepper to taste
1/2teaspoonred pepper flakes (optional)
1/2cupbreadcrumbs (for topping)
Instructions
Preheat your oven to 375°F (190°C), and lightly grease a baking dish (about 9×13 inches).
In a large mixing bowl, combine the softened cream cheese, sour cream, chicken broth, garlic powder, onion powder, salt, pepper, and red pepper flakes (if using). Whisk until the mixture is smooth and creamy.
Fold in the shredded chicken and chopped spinach, mixing until all the ingredients are evenly coated.
Transfer the mixture to the prepared baking dish, spreading it into an even layer.
Sprinkle the shredded mozzarella cheese over the top.
Evenly distribute the breadcrumbs across the mozzarella layer for a golden, crispy finish.
Bake in the preheated oven for 25–30 minutes, or until the casserole is hot and bubbly and the breadcrumbs are golden brown.
Remove from the oven and let the casserole rest for about 5 minutes before serving. This allows the cheesy sauce to thicken slightly for the perfect scoopable texture!
Notes
This casserole pairs beautifully with a crisp green salad, warm garlic bread, or steamed vegetables. For extra comfort, serve with a fluffy dinner roll.
