  • 2 cups cooked chicken, shredded
  • 2 cups baby spinach
  • 2 cups Alfredo sauce homemade or store-bought
  • 1.5 cups mozzarella cheese, shredded
  • 0.5 cups Parmesan cheese, grated
  • 1 tablespoon butter
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  • Preheat your oven to 350°F (175°C). Lightly grease a medium-sized baking dish.
  • In a skillet over medium heat, melt the butter. Add the minced garlic and sauté until fragrant and golden, about 1 minute.
  • Add the baby spinach to the skillet and cook until wilted, stirring occasionally. Season with a pinch of salt and pepper. Remove from the heat.
  • In a large bowl, combine the shredded, cooked chicken with the Alfredo sauce. Mix until the chicken is well coated.
  • Spread the chicken and Alfredo mixture evenly into the prepared baking dish.
  • Spoon the sautéed spinach and garlic mixture over the chicken layer.
  • Sprinkle the shredded mozzarella cheese evenly over the top, followed by the grated Parmesan.
  • Bake in the preheated oven for about 30 minutes, or until the cheese is melted, bubbly, and turning golden at the edges.
  • Allow to cool for a few minutes, then serve hot and enjoy!

Notes

For an even creamier casserole, add a splash of milk or half-and-half to your Alfredo sauce before mixing with the chicken. Rotisserie chicken is a great shortcut and adds extra flavor.
