Ingredients
Ingredients
2cupscooked chicken, shredded
2cupsbaby spinach
2cupsAlfredo saucehomemade or store-bought
1.5cupsmozzarella cheese, shredded
0.5cupsParmesan cheese, grated
1tablespoonbutter
2clovesgarlic, minced
Salt and pepperto taste
Instructions
Preheat your oven to 350°F (175°C). Lightly grease a medium-sized baking dish.
In a skillet over medium heat, melt the butter. Add the minced garlic and sauté until fragrant and golden, about 1 minute.
Add the baby spinach to the skillet and cook until wilted, stirring occasionally. Season with a pinch of salt and pepper. Remove from the heat.
In a large bowl, combine the shredded, cooked chicken with the Alfredo sauce. Mix until the chicken is well coated.
Spread the chicken and Alfredo mixture evenly into the prepared baking dish.
Spoon the sautéed spinach and garlic mixture over the chicken layer.
Sprinkle the shredded mozzarella cheese evenly over the top, followed by the grated Parmesan.
Bake in the preheated oven for about 30 minutes, or until the cheese is melted, bubbly, and turning golden at the edges.
Allow to cool for a few minutes, then serve hot and enjoy!
Notes
For an even creamier casserole, add a splash of milk or half-and-half to your Alfredo sauce before mixing with the chicken. Rotisserie chicken is a great shortcut and adds extra flavor.
