Instructions
Cook the noodles according to the package instructions. Drain and set aside.
While the noodles cook, heat the vegetable oil in a large skillet or wok over medium-high heat.
Add the shrimp, season lightly with salt and pepper, and stir-fry for 2-3 minutes until they turn pink and just cooked through. Remove shrimp from the pan and set aside.
In the same pan, add the sesame oil and minced garlic. Stir for about 30 seconds until fragrant; keep the heat moderate to avoid burning the garlic.
Stir in the soy sauce, oyster sauce (if using), and chili sauce. Let the sauce simmer for 1 minute to combine flavors.
Return noodles and shrimp to the skillet. Toss everything together until the noodles are evenly coated and heated through.
Sprinkle chopped green onions and sesame seeds on top. Give it all one last toss before serving hot.
