Ingredients

Dry Ingredients

  • 1 cup yellow cornmeal
  • 1/2 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt

Wet Ingredients

  • 1/2 cup milk
  • 1/4 cup unsalted butter, melted

Instructions

  • Preheat your oven to 400°F (200°C) and grease a muffin tin.
  • In a large mixing bowl, combine the yellow cornmeal, all-purpose flour, granulated sugar, baking powder, and salt.
  • In another bowl, mix together the milk and melted butter.
  • Pour the wet ingredients into the dry ingredients and stir until just combined.
  • Fill the muffin tin with the batter, about 2/3 full.
  • Bake for 15-20 minutes or until the tops are golden and a toothpick inserted comes out clean.
  • Let cool slightly before serving. Optionally, serve warm with honey butter.

Notes

For extra sweetness, drizzle honey over the poppers before serving. Do not overmix the batter to keep them fluffy.
