Ingredients

Canned Salmon

  • 1 can (14.75-ounce) salmon, drained and flaked

Vegetables

  • 1/4 cup onion, finely chopped

Dry Ingredients

  • 1/4 cup cornmeal
  • 1/4 cup flour

Binding Agents

  • 1 large egg
  • 3 tablespoons mayonnaise

Seasoning

  • to taste salt
  • to taste pepper

Oil

  • as needed oil for frying (vegetable or canola)

Instructions

  • Drain and flake the salmon into a large bowl, removing any large bones if desired.
  • Add the chopped onion, cornmeal, flour, salt, and pepper to the salmon.
  • In a separate bowl, whisk together the egg and mayonnaise, then stir it into the salmon mixture.
  • Shape the mixture into 6–8 patties, about 2–3 inches in diameter.
  • Pour about 1 inch of oil into a skillet and heat over medium heat until shimmering.
  • Place the patties into the skillet in batches, cooking each side for 3–4 minutes until golden brown and crispy.
  • Remove the patties and place them on a paper towel-lined plate to drain any excess oil.

Notes

Serve with creamy coleslaw, buttered rice, or a crisp garden salad. Add a side of cornbread for a complete meal.
