salmon, drained and flaked

Instructions
Drain and flake the salmon into a large bowl, removing any large bones if desired.
Add the chopped onion, cornmeal, flour, salt, and pepper to the salmon.
In a separate bowl, whisk together the egg and mayonnaise, then stir it into the salmon mixture.
Shape the mixture into 6–8 patties, about 2–3 inches in diameter.
Pour about 1 inch of oil into a skillet and heat over medium heat until shimmering.
Place the patties into the skillet in batches, cooking each side for 3–4 minutes until golden brown and crispy.
Remove the patties and place them on a paper towel-lined plate to drain any excess oil.
Notes
Serve with creamy coleslaw, buttered rice, or a crisp garden salad. Add a side of cornbread for a complete meal.
