Instructions
Chop the cabbage and slice the onion into rings.
In a Dutch oven or deep skillet, cook chopped bacon over medium heat until crisp. Remove with a slotted spoon, leaving the grease.
Add vegetable oil to the bacon grease.
Stir in the cabbage and onions, coating them well in the fat.
Cook on medium-low for about 1 hour, stirring every 10–15 minutes, until cabbage is soft, golden, and slightly crisp at the edges.
Add vinegar, salt, and pepper to taste. Return bacon to the pot and stir to combine.
Simmer for an additional 10 minutes. Serve hot and enjoy!
Notes
Use apple cider vinegar for a sweeter twist. Add red pepper flakes or smoked paprika for extra depth. Great with cornbread or grilled sausage!
