Instructions
In a large pan, combine sugar, buttermilk, corn syrup, and salt. Bring to a rolling boil over medium heat.
Once boiling, add baking soda. Stir and cook until syrup reaches the “soft-ball” stage (235°F).
Remove from heat and add vanilla extract. Beat the mixture until it lightens and thickens into a creamy consistency.
Stir in pecans and drop spoonfuls onto a well-greased cookie sheet. Work quickly as the candy will harden fast.
Allow pralines to cool and set completely before enjoying. Store leftovers in an airtight container.
Notes
For best results, ensure the pan is well-greased to prevent sticking. These pralines can last up to 2 weeks in an airtight container.
