Instructions
In a large bowl, cream together the peanut butter, softened butter, brown sugar, and granulated sugar until smooth.
Beat in the eggs, one at a time, then stir in the vanilla extract.
In another bowl, whisk together the flour, baking soda, and salt.
Gradually add the flour mixture to the peanut butter mixture until well blended.
Shape the dough into 1-inch balls and place them about 2 inches apart on baking sheets lined with parchment paper.
Flatten each ball with the back of a fork to create a crisscross pattern.
Bake in a preheated oven at 375°F (190°C) for 8-10 minutes or until the edges start to brown.
Remove from the oven and let them cool on the baking sheets for a few minutes before transferring to wire racks to cool completely.
