Ingredients

Dry Ingredients

  • 2.25 cups all-purpose flour
  • 2 teaspoons baking soda
  • 0.25 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 0.5 teaspoon ground cloves

Wet Ingredients

  • 0.75 cup unsalted butter, softened
  • 1 cup dark brown sugar, packed
  • 1 large egg
  • 0.25 cup molasses
  • to taste granulated sugar for rolling

Instructions

  • In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, ginger, and cloves. Set this aside for later.
  • In a large mixing bowl, cream together the softened butter and brown sugar until it’s light and fluffy.
  • Beat in the egg and molasses until everything is well combined.
  • Gradually mix in the dry ingredients with the wet mixture until just combined. Avoid overmixing!
  • Refrigerate the dough for at least 1 hour. This helps the cookies hold their shape when baking.
  • Preheat your oven to 375°F (190°C) and line your baking sheets with parchment paper.
  • Shape the chilled dough into 1-inch balls, then roll each ball in granulated sugar before placing them on the prepared baking sheets about 2 inches apart.
  • Bake for 8-10 minutes, just until the edges are set but the centers stay soft.
  • Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Make sure your butter is softened but not melted for the best texture. Don't skip the chilling time! It helps the cookies bake evenly and maintain their shape.
