Instructions
In a large bowl, cream together the butter, brown sugar, and granulated sugar until smooth.
Beat in the eggs one at a time, then stir in the vanilla extract.
In another bowl, combine the flour, baking soda, cinnamon, and salt. Gradually add this mix to the creamed mixture.
Stir in the rolled oats and chocolate chips until well combined.
Drop rounded spoonfuls of dough onto ungreased baking sheets.
Bake at 375°F (190°C) for 8-10 minutes or until the edges start to brown.
Let the cookies cool on the baking sheet for a few minutes before transferring them to wire racks to cool completely.
Notes
Store cookies in an airtight container at room temperature for up to a week. They can also be frozen for about three months.
