  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 3 cups rolled oats
  • 1 cup semisweet chocolate chips

Instructions

  • In a large bowl, cream together the butter, brown sugar, and granulated sugar until smooth.
  • Beat in the eggs one at a time, then stir in the vanilla extract.
  • In another bowl, combine the flour, baking soda, cinnamon, and salt. Gradually add this mix to the creamed mixture.
  • Stir in the rolled oats and chocolate chips until well combined.
  • Drop rounded spoonfuls of dough onto ungreased baking sheets.
  • Bake at 375°F (190°C) for 8-10 minutes or until the edges start to brown.
  • Let the cookies cool on the baking sheet for a few minutes before transferring them to wire racks to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to a week. They can also be frozen for about three months.
