Instructions
Preheat your oven to 350 degrees Fahrenheit. Line a 9x13-inch baking pan with parchment paper for easy removal and clean-up.
Arrange the graham crackers in a single layer on the bottom of the pan. Break crackers as needed to ensure the entire surface is covered with no big gaps.
In a medium saucepan over medium-high heat, combine the salted butter and packed light brown sugar. Stir constantly until the butter is fully melted.
Bring the mixture to a gentle boil, continuing to stir. Let it boil for 3-4 minutes until it thickens and forms a caramel-like sauce.
Carefully pour the hot caramel evenly over the graham crackers, spreading it out with a spatula if needed to coat the crackers fully.
Place the pan in the oven and bake for 6-8 minutes, until the caramel is bubbly and the graham crackers have softened slightly.
Remove the pan from the oven and immediately sprinkle the broken chocolate bar pieces over the hot caramel. Follow with an even layer of mini marshmallows.
Switch the oven to ‘broil’. Place the pan back in the oven for 1-2 minutes—just until the marshmallows are golden and toasted. Watch closely, as marshmallows brown very quickly under the broiler.
Let the pan cool for at least 15-20 minutes, allowing the bars to set and the caramel to harden somewhat.
Once mostly cooled but still slightly soft, use the parchment to lift the bars out and cut them into squares. Serve and enjoy!
Notes
For the best flavor, use high-quality chocolate. You can also add a pinch of sea salt to the caramel for a salted caramel flavor.
