  • 2 cups cooked chicken, shredded
  • 1 cup cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced jalapeños (fresh or pickled)
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 8 large flour tortillas
  • 1/4 cup cilantro, chopped (optional)
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 375°F (190°C).
  • In a mixing bowl, combine the shredded chicken, cream cheese, cheddar cheese, jalapeños, smoked paprika, garlic powder, onion powder, and cilantro (if using). Season with salt and pepper.
  • Spread a portion of the filling onto each tortilla. Roll them tightly, then place them seam-side down in a greased baking dish.
  • Bake for 20-25 minutes or until the tortillas are lightly golden and the filling is heated through.
  • Allow to cool slightly before slicing and serving. Enjoy!

Notes

For extra creaminess, add more cream cheese or a blend of cheeses. To increase spiciness, use fresh jalapeños or add diced green chilies. Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven at 350°F (175°C) for 10-15 minutes.
