In a large mixing bowl, combine the sour cream, cream of mushroom soup, whole milk, melted butter, garlic powder, salt, black pepper, and optional paprika. Stir until you have a smooth, creamy mixture.
Add the thawed hash browns, browned sausage, chopped onion, and 1 cup of shredded cheddar cheese to the bowl. Mix everything together until well combined.
Pour the casserole mixture into your prepared baking dish, spreading it out evenly. Sprinkle the remaining 1/2 cup of cheddar cheese across the top for a delicious cheesy crust.
Bake uncovered in the preheated oven for 45 minutes, or until the top is golden and the casserole is bubbling around the edges.
