Instructions
Lay your skirt steak flat in the bottom of the slow cooker.
Remove the ribs and seeds from both bell peppers. Slice the peppers lengthwise into thin strips and layer them around the steak inside the slow cooker.
Peel the half red onion and slice it into petals. Add these onion slices on top of the peppers and steak.
In a small bowl, whisk together the olive oil, homemade fajita seasoning, lime juice, and honey until well combined. Pour this mixture evenly over the steak, peppers, and onions.
Cover the slow cooker and set it on high for 3-4 hours or on low for 6-8 hours, depending on your schedule.
Once cooking is done, carefully remove the steak and vegetables from the slow cooker. Slice the steak into thin strips.
Serve the steak and vegetables with flour tortillas, and top with sour cream and cheese or any of your favorite toppings.
Notes
Leftover fajitas make a fantastic lunch the next day! Store in an airtight container for up to 4 days or freeze for up to two months.
