Slow Cooker Steak Fajitas

  • 1.5 pounds Skirt Steak
  • 2 pieces Bell Peppers (1 orange and 1 yellow)
  • 0.5 large Red Onion
  • 2 tablespoons Olive Oil
  • 2 tablespoons Homemade Fajita Seasoning
  • 1 piece Lime (Juice of one)
  • 1 tablespoon Honey
  • to taste Flour Tortillas
  • to taste Sour Cream Optional for serving
  • to taste Cheese Optional for serving

Instructions

  • Lay your skirt steak flat in the bottom of the slow cooker.
  • Remove the ribs and seeds from both bell peppers. Slice the peppers lengthwise into thin strips and layer them around the steak inside the slow cooker.
  • Peel the half red onion and slice it into petals. Add these onion slices on top of the peppers and steak.
  • In a small bowl, whisk together the olive oil, homemade fajita seasoning, lime juice, and honey until well combined. Pour this mixture evenly over the steak, peppers, and onions.
  • Cover the slow cooker and set it on high for 3-4 hours or on low for 6-8 hours, depending on your schedule.
  • Once cooking is done, carefully remove the steak and vegetables from the slow cooker. Slice the steak into thin strips.
  • Serve the steak and vegetables with flour tortillas, and top with sour cream and cheese or any of your favorite toppings.

Notes

Leftover fajitas make a fantastic lunch the next day! Store in an airtight container for up to 4 days or freeze for up to two months.
