Slow Cooker Garlic Butter Beef Bites & Potatoes

  • 2 pounds beef stew meat cut into bite-sized pieces if not already
  • 5 tablespoons butter sliced or chilled so it melts slowly
  • 1 pound baby yellow potatoes rinsed and halved
  • 1 tablespoon onion powder
  • 1 teaspoon garlic powder
  • 1 tablespoon fresh garlic chopped (about 1 clove large or 2 small)
  • 2 teaspoons seasoned salt

Instructions

  • Pat the beef stew meat dry with paper towels to help seasonings stick and to reduce excess moisture.
  • In the slow cooker, add the beef in an even layer. Sprinkle the onion powder, garlic powder, and seasoned salt over the beef, rubbing lightly so the spices cling.
  • Scatter the sliced butter pieces over the top of the seasoned beef so the butter melts down into the meat and forms the sauce.
  • Add the chopped fresh garlic on top of the butter and beef for bright garlic flavor that infuses during cooking.
  • Cut the baby yellow potatoes in half and tuck them around and on top of the beef, distributing evenly so they cook through.
  • Cover the slow cooker and set to cook on low for 6 to 8 hours. Check for tenderness after 6 hours — beef should be fork-tender and potatoes soft but holding shape.
  • When done, give everything a gentle stir so the butter and juices coat the meat and potatoes. Taste and adjust seasoning with a little more seasoned salt or a pinch of black pepper if needed.
  • Serve hot, spooning sauce over the beef and potatoes. A pat of butter or sprinkle of fresh parsley on top makes a pretty finishing touch.

Notes

Store leftovers in an airtight container for up to 3 to 4 days. For freezing, cool completely and transfer to freezer-safe containers for up to 2 months.
