Instructions
Start by heating a large skillet over medium-high heat. Add the ground beef, breaking it up with a spoon, and cook until browned and no longer pink. Drain any excess fat.
Add the diced onion and sauté for 2-3 minutes until softened. Stir in the minced garlic and let it cook for another 30 seconds until fragrant.
Mix in the ketchup, brown sugar, and mustard. Stir well to combine, then let the mixture simmer for about 5 minutes until slightly thickened. Remove from heat.
Lay out the bread slices on a cutting board. Generously butter one side of each slice.
On the unbuttered side of four slices, sprinkle about half of the cheese. Spoon the sloppy joe mixture evenly over the cheese, then top with the remaining cheese. Place the remaining bread slices on top, buttered side facing out.
Heat a griddle or clean skillet over medium heat. Place the sandwiches on the griddle and cook until golden brown and crispy on one side, about 2-3 minutes. Flip and grill the other side until equally golden and the cheese is melted.
Remove from heat, let rest for 1-2 minutes, then slice and serve warm!
