Sloppy Joe Grilled Burritos

  • 2 pounds lean ground beef
  • to taste Salt

  • 2 tbsp chopped onion
  • 2 tbsp red bell pepper, chopped
  • 2 tbsp green bell pepper, chopped
  • 1 cup ketchup
  • 3 tbsp Worcestershire sauce
  • 2 tsp light brown sugar
  • 1 tsp onion powder
  • 2 cups Cheddar cheese, shredded
  • 1 cup milk
  • 1 tbsp butter
  • 1 cup Cheddar cheese, additional for sprinkling
  • 3 tbsp oil
  • 4 large tortillas

Instructions

  • In a large skillet over medium heat, add the ground beef. Season with salt and pepper, and cook until browned, breaking it apart as it cooks. Drain any excess fat.
  • Sprinkle in the chopped onion, red and green bell peppers. Sauté for about 3-4 minutes until the vegetables soften slightly.
  • Stir in the ketchup, Worcestershire sauce, brown sugar, and onion powder. Let the mixture simmer for about 5 minutes, allowing the flavors to meld. Remove from heat.
  • In a separate saucepan, melt the butter over medium heat. Add the milk and bring it to a gentle simmer. Gradually whisk in 2 cups of shredded cheddar cheese until melted and creamy. Remove from heat.
  • Lay one tortilla flat and spoon a generous amount of the beef mixture in the center. Top with a spoonful of cheese sauce and an additional sprinkle of cheese. Fold the sides in and roll the burrito tightly.
  • In the same skillet or grill, heat 3 tbsp of oil over medium-high heat. Place the burrito seam-side down and grill for 3-4 minutes on each side until golden brown and crispy.
  • Slice the burritos in half and serve hot, drizzling with extra cheese sauce if desired!

Notes

For spicier burritos, add jalapeños or a dash of hot sauce in the beef mixture. If you want to save time, prepare the beef mixture ahead and refrigerate for easy assembly later.
