Sloppy Joe Casserole

Ingredients

Meat and Vegetables

  • 1 pound Ground beef Can substitute with ground turkey
  • 1 small Onion, diced
  • 1 medium Green bell pepper, diced
  • 2 cloves Garlic, minced

Sauce Ingredients

  • 1 can Tomato sauce 15 oz
  • 1/2 cup Ketchup
  • 2 tablespoons Brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Yellow mustard
  • to taste Salt and black pepper

Pasta and Cheese

  • 3 cups Cooked pasta Elbow macaroni or penne
  • 2 cups Shredded cheddar cheese Divided
  • 1 cup Crushed crackers or French fried onions Optional, for topping

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, brown the ground beef over medium heat until no longer pink. Drain excess fat. Add the diced onion, green bell pepper, and garlic. Sauté for 5 minutes until vegetables are tender.
  • Stir in tomato sauce, ketchup, brown sugar, Worcestershire sauce, mustard, salt, and pepper. Simmer for 5 minutes.
  • In a large bowl, mix the cooked pasta with the meat mixture. Stir in 1 1/2 cups of the shredded cheddar cheese.
  • Transfer to a greased casserole dish. Top with remaining cheese and optional crushed crackers or fried onions.
  • Bake for 25-30 minutes, or until cheese is bubbly and golden.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days. For longer storage, freeze in a sealed container for up to 3 months.
