  • 1 pound Shrimp, peeled and deveined
  • 1 pound Sausage, sliced
  • 4 large Potatoes, diced
  • 1 large Onion, chopped
  • 2 cloves Garlic, minced
  • 4 cups Chicken broth
  • 1 can Diced tomatoes
  • 1 teaspoon Paprika
  • 1 teaspoon Thyme
  • 1 teaspoon Cayenne pepper
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  • 1. Peel and devein the shrimp. Dice the potatoes, chop the onion, and mince the garlic.
  • 2. Heat a tablespoon of olive oil in a large pot over medium heat. Add the sliced sausage and cook until browned. Remove and set aside.
  • 3. In the same pot, add the chopped onion and garlic. Sauté until the onion is translucent.
  • 4. Stir in the diced potatoes and cook for about 5 minutes, allowing them to absorb the flavors.
  • 5. Return the sausage to the pot. Add the chicken broth, diced tomatoes, paprika, thyme, cayenne pepper, salt, and pepper. Bring to a boil, then reduce to a simmer.
  • 6. Cover the pot and let the stew simmer for 40 minutes, or until the potatoes are tender.
  • 7. In the last 10 minutes of cooking, add the shrimp. Cook until the shrimp are pink and fully cooked.
  • 8. Garnish with fresh parsley or green onions and serve hot with crusty bread or rice.

Notes

For extra flavor, use Andouille sausage for a Cajun twist. Adjust spice levels by increasing or decreasing the cayenne pepper. Store leftovers in the fridge for up to 3 days.
