Instructions
1. Peel and devein the shrimp. Dice the potatoes, chop the onion, and mince the garlic.
2. Heat a tablespoon of olive oil in a large pot over medium heat. Add the sliced sausage and cook until browned. Remove and set aside.
3. In the same pot, add the chopped onion and garlic. Sauté until the onion is translucent.
4. Stir in the diced potatoes and cook for about 5 minutes, allowing them to absorb the flavors.
5. Return the sausage to the pot. Add the chicken broth, diced tomatoes, paprika, thyme, cayenne pepper, salt, and pepper. Bring to a boil, then reduce to a simmer.
6. Cover the pot and let the stew simmer for 40 minutes, or until the potatoes are tender.
7. In the last 10 minutes of cooking, add the shrimp. Cook until the shrimp are pink and fully cooked.
8. Garnish with fresh parsley or green onions and serve hot with crusty bread or rice.
Notes
For extra flavor, use Andouille sausage for a Cajun twist. Adjust spice levels by increasing or decreasing the cayenne pepper. Store leftovers in the fridge for up to 3 days.
