Instructions

  • Preheat your grill to medium-high heat or oven to 425°F (220°C).
  • In a large bowl, combine shrimp, sausage, bell peppers, red onion, garlic, and corn.
  • Drizzle with olive oil and sprinkle with Cajun seasoning, salt, and pepper. Toss to evenly coat.
  • Cut 4 large sheets of aluminum foil and divide the mixture evenly among the sheets. Top each with a few lemon slices.
  • Fold the foil over the ingredients and seal the edges to create a packet, ensuring it is tightly sealed to keep all juices inside.
  • Grill over medium-high heat or bake in the oven for 15-20 minutes, until the shrimp are pink and cooked through and the vegetables are tender.
  • Carefully open the packets (watch for steam), sprinkle with fresh parsley, and serve directly from the packets.

Notes

For extra spice, add a pinch of cayenne pepper. To store leftovers, refrigerate in an airtight container for up to 3 days or freeze for up to 2 months.
