Instructions
Preheat oven to 375°F. Lightly grease a 9x13-inch casserole dish or similar-sized baking dish.
Heat a large skillet over medium-high heat. Add ground beef, chopped onion, and minced garlic. Cook, breaking the beef apart with a spatula, until the beef is browned and the onion is translucent, about 6 to 8 minutes.
Drain excess fat from the skillet using a spoon or by carefully tilting the pan and blotting with a paper towel. Return the skillet to the heat.
Stir in cream of mushroom soup and frozen mixed vegetables. Mix until well combined and heated through, about 2 minutes.
Add seasonings: salt, black pepper, garlic powder, and onion powder. Taste and adjust seasonings if needed.
Pour the beef and vegetable mixture into the prepared casserole dish and spread it into an even layer.
Arrange a single layer of frozen tater tots over the beef mixture to fully cover the surface.
Bake in the preheated oven for 30 minutes, until the filling bubbles around the edges and the tater tots begin to crisp.
Remove the casserole from the oven and evenly sprinkle shredded cheddar cheese over the tater tots. Return to the oven and bake an additional 10 minutes, or until the cheese is melted and the tater tots are golden brown.
Let the casserole rest for 5 minutes before serving so the filling sets slightly.
Notes
Use lean ground beef to avoid excessive grease. Drain the cooked beef well so the casserole isn’t watery. For a deeper flavor, sauté the onion until golden and deglaze the pan with a tablespoon of Worcestershire sauce before adding the soup.
