Instructions
Preheat your oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
In a large mixing bowl, combine the cake mix, egg whites, water, vegetable oil, mint extract, and green food coloring. Mix until smooth.
Fill each cupcake liner about 2/3 full with batter.
Bake for 15-20 minutes or until a toothpick inserted in the center comes out clean.
Allow cupcakes to cool completely before frosting.
Frost with your favorite buttercream or whipped topping and enjoy!
