  • 1/2 cup powdered sugar
  • 1/4 teaspoon lemon juice
  • 1/3 cup fresh strawberries, diced
  • 1 tablespoon corn starch
  • 1 cup unsalted butter
  • 1 cup granulated white sugar
  • 1/2 cup light brown sugar
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • 3 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  • Combine cream cheese, lemon juice, and powdered sugar. Scoop twelve 1 tsp balls onto wax paper and freeze until solid.
  • Toss diced strawberries with cornstarch; set aside.
  • Whisk flour, baking powder, baking soda, and salt; set aside.
  • Cream butter and sugars in a mixer until smooth, about 3 minutes. Add eggs and vanilla gradually; mix until combined.
  • Mix in flour mixture, then fold in strawberries. Freeze dough for 30 minutes or refrigerate for 1 hour.
  • Preheat oven to 350°F. Shape dough into balls (2 tablespoons each). Create an indent, insert frozen cream cheese ball, seal dough around it.
  • Bake for 14-16 minutes until lightly golden. Cool completely before serving.

Notes

Ensure cream cheese is softened for easy mixing. Don't skip freezing the cream cheese balls, as it keeps the filling intact. Fresh strawberries yield the best flavor.
