Instructions
Combine cream cheese, lemon juice, and powdered sugar. Scoop twelve 1 tsp balls onto wax paper and freeze until solid.
Toss diced strawberries with cornstarch; set aside.
Whisk flour, baking powder, baking soda, and salt; set aside.
Cream butter and sugars in a mixer until smooth, about 3 minutes. Add eggs and vanilla gradually; mix until combined.
Mix in flour mixture, then fold in strawberries. Freeze dough for 30 minutes or refrigerate for 1 hour.
Preheat oven to 350°F. Shape dough into balls (2 tablespoons each). Create an indent, insert frozen cream cheese ball, seal dough around it.
Bake for 14-16 minutes until lightly golden. Cool completely before serving.
