Instructions
Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish to prevent sticking.
In a large skillet over medium heat, add the ground beef and chopped onion. Cook until the beef is browned and onions are soft, about 5-7 minutes. Drain any excess fat.
In the skillet, stir in the garlic powder, salt, and pepper. Add the uncooked rice and mix well to combine all flavors.
Pour the beef and rice mixture into the prepared baking dish. Spread evenly. In a mixing bowl, whisk together the cream of mushroom soup and beef broth until smooth. Pour this mixture over the beef and rice, spreading to cover evenly.
Cover the baking dish tightly with aluminum foil. Bake for 30 minutes.
After 30 minutes, remove the foil. Sprinkle shredded cheddar cheese evenly over the top.
Return the dish to the oven, uncovered, for another 8-10 minutes, or until the cheese is melted and bubbling. Let it cool for a few minutes before digging in!
Notes
For extra veggies, stir in diced bell peppers, peas, or corn with the beef and onion step. You can also swap the cream of mushroom soup for cream of chicken or celery.
