  • 1 lb Turkey sausage, sliced into 1/4-inch rounds
  • 1 large Green bell pepper, sliced into strips
  • 1 medium Yellow bell pepper, sliced into strips (optional)
  • 1 large Yellow onion, sliced
  • 1 cup Cherry tomatoes, halved (or 1 medium tomato, diced)
  • 2 tablespoons Olive oil or butter, for cooking
  • 1 teaspoon Garlic powder
  • 1 teaspoon Black pepper
  • 1/2 teaspoon Salt, or to taste
  • 1 teaspoon Cajun seasoning (optional)
  • 2 cups Cooked white rice, for serving

Instructions

  • Prep the Ingredients: Slice sausage into 1/4-inch rounds. Slice bell peppers into strips and slice the onion. Halve the cherry tomatoes or dice a medium tomato if using.
  • Brown the Sausage: Heat 2 tablespoons olive oil or butter in a large skillet over medium heat. Add sausage slices in a single layer and cook 4 to 5 minutes per side until browned and slightly crisp. Work in batches if needed so the sausage browns evenly. Remove the sausage and set aside on a plate.
  • Sauté the Veggies: Using the same skillet, add sliced onions and bell peppers. Sauté for 5 to 6 minutes over medium heat until they begin to soften and the onions start to caramelize. Add the cherry tomatoes and cook 2 to 3 minutes more, stirring occasionally, until the tomatoes release their juices and the mix begins to look saucy.
  • Season and Combine: Return the browned sausage to the skillet. Sprinkle garlic powder, black pepper, salt, and Cajun seasoning if using. Stir thoroughly to coat the meat and vegetables so the spices distribute evenly.
  • Simmer to Blend Flavors: Cook the combined mixture for another 2 to 3 minutes so flavors can meld and the tomatoes reduce slightly into a light sauce. Taste and adjust salt or seasoning as needed.
  • Serve: Spoon the sausage and veggie mixture over bowls of hot cooked white rice. Garnish with chopped herbs, shredded cheese, or a squeeze of lemon if desired. Serve immediately and enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 to 4 days. Freeze in freezer-safe containers for up to 2 months. Reheat gently on the stovetop over low-medium heat, adding a splash of water or broth if the mixture is dry.
