  • 1 pound Breakfast sausage
  • 6 large Eggs
  • 1/4 cup Milk
  • Salt and pepper to taste
  • 1 cup Cheddar cheese, shredded
  • 8 pieces Flour tortillas
  • Butter for frying
  • Salsa or hot sauce for serving (optional)

Instructions

  • Start by heating a skillet over medium heat. Cook the breakfast sausage until it’s browned and crumbly. Once done, drain any extra fat and set it aside.
  • In a bowl, whisk together the eggs, milk, salt, and pepper.
  • In the same skillet, melt a little butter and pour in the egg mixture. Scramble the eggs until they are just set and cooked through.
  • To make the tortillas soft and easy to roll, warm them in the microwave for about 20 seconds.
  • Now it’s time to assemble! On each tortilla, sprinkle some cheddar cheese, add the scrambled eggs, and finish with a bit of the cooked sausage. Roll them up tightly.
  • Wipe the skillet clean, then melt a bit more butter over medium heat. Place the roll-ups seam side down and cook until golden brown on all sides, turning them occasionally.
  • Serve hot, with salsa or hot sauce on the side if you like a little extra kick.

Notes

These roll-ups are great on their own or served with a side of fresh fruit. You can also add some salsa or hot sauce for extra flavor. They make an excellent breakfast or brunch dish!
