Instructions
Start by heating a skillet over medium heat. Cook the breakfast sausage until it’s browned and crumbly. Once done, drain any extra fat and set it aside.
In a bowl, whisk together the eggs, milk, salt, and pepper.
In the same skillet, melt a little butter and pour in the egg mixture. Scramble the eggs until they are just set and cooked through.
To make the tortillas soft and easy to roll, warm them in the microwave for about 20 seconds.
Now it’s time to assemble! On each tortilla, sprinkle some cheddar cheese, add the scrambled eggs, and finish with a bit of the cooked sausage. Roll them up tightly.
Wipe the skillet clean, then melt a bit more butter over medium heat. Place the roll-ups seam side down and cook until golden brown on all sides, turning them occasionally.
Serve hot, with salsa or hot sauce on the side if you like a little extra kick.
