  • 1 lb Breakfast Sausage Uncooked
  • 8 oz Cream Cheese Softened
  • 1 can (10 oz) Rotel Tomatoes with Green Chilies Drained
  • 1.5 cups Shredded Cheddar Cheese
  • 1.5 cups Baking Mix Bisquick or similar
  • 0.5 teaspoon Cayenne Pepper Optional for extra spice

Instructions

  • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper to prevent sticking and make clean-up easier.
  • In a large mixing bowl, combine the breakfast sausage (uncooked), softened cream cheese, drained Rotel tomatoes with green chilies, shredded cheddar cheese, baking mix, and cayenne pepper if you want an extra kick.
  • Using clean hands or a sturdy spoon, mix everything together thoroughly. The mixture should be sticky and well-combined, with all ingredients evenly dispersed.
  • Roll the mixture into small balls, about 1 inch in diameter. Use a tablespoon to scoop for even sizing.
  • Place the sausage balls evenly on the prepared baking sheet, leaving a little space between each.
  • Bake in the preheated oven for 18-20 minutes, or until the bites are golden brown and cooked through. If you want a crisper exterior, bake for an extra minute or two.
  • Remove from the oven and let cool for a few minutes before serving. Enjoy warm for the best flavor and texture!

Notes

These bites are best served warm. Pair with ranch or sriracha dipping sauce for extra flavor!
